Lincolnshire Co-op uses AI to save 2.1 million meals from landfill

Lincolnshire Co-op has extended its partnership with in-store execution software provider Retail Insight for an additional four years to reduce food waste across its store estate.

As part of the extended collaboration, the convenience retailer will roll out an enhanced version of Retail Insight’s ‘Waste Trim’ feature, which uses a data-led model to optimise stock assortment, minimise overstocking and further cut food waste.

Lincolnshire Co-op has so far swapped carrier bags to 100% compostable and moved 100% of its own-brand packaging to easily recyclable materials as it aims to make recycling easier for customers,

Since 2021, the co-operative has also been leveraging Retail Insight’s WasteInsight platform, which uses a dynamic, data-led model to optimise price reductions, and has reduced food waste by 37% by offering mark-downs on food items nearing expiry.

Last year alone, Lincolnshire Co-op reported a 90.8% sell-through rate using the solution, which prevented 2.1 million meals from being wasted and resulted in the prevention of 5,700 tonnes of CO2 emissions.

Retail Insight’s Waste Trim feature will help revolutionise our approach to inventory management and has significantly contributed to our sustainability goals. We look forward to realising further benefits with the enhanced version of the tool.”
