Supermarkets to start selling lab-grown 3D-printed salmon

Food tech start-up Revo Foods is set to launch what it describes as the ‘world’s first’ 3D-printed salmon into supermarkets.

The fungi-based fillet, which is ‘inspired by salmon’, is first launching in Austrian supermarkets and will hit US stores in 2024, MailOnline reported.

The product features 9.5g of protein per 100g and is rich in vitamins and omega-3 fatty acids.

The Vienna-based brand also said that the production of ‘The Filet’ through 3D-printing uses between 77% to 86% less carbon dioxide and 95% less freshwater than typically used for wild caught salmon.

To create the vegan salmon, Revo Foods partnered with start-up Mycorena to develop a mycoprotein from fungi capable of being distributed and deposited through a 3D printer.

Revo Foods CEO Robin Simsa said in a statement: “With the milestone of industrial-scale 3D food printing, we are entering a creative food revolution. An era where food is being crafted exactly according to the customer needs.”

Lab-grown meat has also become more common in recent years, with the UK set to become a world-leading developer of the products as the sector is predicted to rapidly increase its market share within the food industry.

According to a report by GovGrant earlier this year, lab-grown meat is now expected to make up almost a quarter of global meat consumption by 2035.
