Co-op has unveiled its summer 2026 range, spanning small plates, barbecue products, desserts, ice cream, health drinks and match day deals.

The convenience retailer said the range had been designed around last-minute “pop to Co-op” occasions during the summer season, from impromptu barbecues to easy picky teas.

A new 25-strong Irresistible Small Plates range features Mediterranean-inspired dishes for casual dining, with products available as part of a three for two offer across the wider picnic and deli range.

New additions include Irresistible Cook & Glaze Chorizo with port and balsamic glaze, Irresistible Pancetta Croquettes with fondue dip, and Irresistible ’Nduja Bravas with fried potatoes and a sweet, smoky sauce.

Lighter picnic options include Irresistible Whipped Ricotta with seasonal pickled chargrilled courgettes, Irresistible Pesto & Pecorino Coleslaw, and Irresistible Feta & Summer Vegetable Quiche topped with paprika crumb.

The retailer has also expanded its barbecue range, adding Irresistible Aberdeen Angus Rump Steaks with Chimichurri Butter, Greek Style Chicken Sizzle Steaks and Irresistible Chorizo Style Pork Sausages.

Co-op said it remains committed to using 100 per cent British own-brand fresh and frozen meat, including when meat is used as an ingredient.

The summer range also includes new desserts and ice cream, with Irresistible Alphonso Mango Cheesecake Slices and Pistachio Tiramisu tapping into trending flavours.

Lemon & Blueberry Ripple Ice Cream and Salted Caramel Pretzel Mini Bites have also been added to the range.

By the end of summer, Co-op said its entire own-brand ice cream range will be “all that can be” Fairtrade, meaning every ingredient that can be sourced as Fairtrade will be Fairtrade.

Co-op is also tapping into rising demand for pickled and tangy flavours with new Dill Pickle Crisps, alongside Irresistible BBQ Lamb Kofta & Tzatziki Crisps, which were recently named best crisps in Good Housekeeping’s Best Picnic Food 2026 awards.

Matcha is another key focus, with Irresistible Matcha Strawberry & White Chocolate Cookies launching in the bakery aisle, alongside Co-op Matcha Latte Sachets.

With football set to drive summer entertaining, Co-op is introducing “big occasion” products and deals, including Detroit Style Pizzas and a Chicken Balti Sub with onion and beer sauce.

A new American Smokehouse version of Co-op’s Served meal deal will also launch in June, offering an easy dinner option ready in 30 minutes.

The retailer has also expanded its own-brand health drinks offer with Lemon & Lime Electrolyte Water, Berries & Pomegranate Bovine Collagen Water, Mango & Passionfruit Fibre Water and two juice shots under its Good Fuel range.

Its wider summer drinks line-up includes ready-to-drink Aperitivo Spritz and Hugo Spritz cocktails, as well as premium own-brand wines including Irresistible Alvarinho and Irresistible Eight Acres Sparkling Rosé.

Co-op head of product development Alexa Masterhorn said: “Our team of product developers are total food lovers who care deeply about quality and innovation, and sourcing ingredients to focus on the products that matters most to our shoppers.

“As the UK’s leading convenience retailer, we’re positioned exactly where our shoppers need us, whether it’s an impromptu barbecue or an easy picky tea.
