Mindful Chef partners with Zoe on a range of gut-friendly recipes
Recipe box firm Mindful Chef has teamed up with science and nutrition company Zoe to launch a range of recipes with a variety of plants and gut-friendly foods.
The recipes, which include a smoky hake, artichoke and sundried tomato stew, aubergine parmigiana, sweetcorn and spinach dhal with curried cashews, and a gochujang bean bowl with eggs and kimchi, will feature on the Mindful Chef menu this November.
Each recipe was handpicked by Zoe co-founder Tim Spector from his new book The Food for Life Cookbook and look to embody the businesses core nutritional principles, such as incorporating 30 different plants per week and minimising ultra-processed foods.

In July, Zoe, which has formed tie-ups with M&S and Waitrose over the past year, secured an £11.7m ($15m) investment as it eyes US expansion.
The funding is understood to have come from New York-based investor Coefficient Capital and will help fuel the brand’s US debut.
