Tesco uses AI to trial healthier food-to-go store layouts

Tesco is expanding its range of healthy, convenient snacks and meals in more prominent store positions with the use of artificial intelligence (AI) technology.

The pilot, which is taking place in 30 of the supermarket giant’s highest footfall Express convenience stores, will use insights from customer science data firm Dunnhumby, The Grocer reported.

Shelf space, which was previously used to stock products including high in fat, salt or sugar (HFSS) items before legislation banning such products from aisle ends, store checkouts and entrances came into play in October 2022, will be used to highlight the healthier food-to-go items.

The trial will see foods such as yoghurt, porridge, fruit, new protein ranges as well as convenience meal pots and heated options laid out in more prominent areas of store.

Tesco managing director of UK stores Kevin Tindall told the title that the move looks to improve the shopping experience for customers, using “insight to give them more of what they like”.

He added that both the range and layout will be tailored “specifically for customers’ on the move”.

It comes as Tesco has launched a second cohort of products for its 2024 Accelerator Programme, which aims to introduce small and trend-led brands into the supermarket, with 16 innovative new brands.
