Tesco launches new plant-led range

Tesco has launched a new plant-led Root & Soul range, offering meals packed with a variety of vegetables, grains and seeds in a bit to appeal to flexitarian diets.

The retailer’s development team has worked in collaboration with in-house chefs to provide meat-free meal options including salads such as a chargrilled courgette and bulgur wheat layered salad, a charred broccoli and rice layered salad, and a chilli roasted sweet potato layered salad.

The selection also features galettes in flavours such as butternut squash, ricotta and spinach, and tomato, courgette and goat’s cheese, as well as other items including a paprika roasted butternut squash with cannellini bean and white wine stew, and a cumin roasted cauliflower with saag masala and coriander.
