M&S launches Australian snack favourite

A Northern Ireland bakery is behind lamingtons hitting M&S stores across the UK.

Based in Magherafelt, Genesis Bakery has been a trusted M&S supplier for over 15 years, delivering award-winning bakery products crafted from high-quality ingredients.

The bakery currently produces a core range of 22 products for M&S, including the Mini Fruity Cupcake Selection, alongside special seasonal offerings for the retailer.

Now, it has turned its attention to creating Australian-inspired lamingtons exclusively for M&S – the first lamingtons available on the UK high street.

The new M&S Lamingtons are available in two flavours:

  • Chocolate & Coconut – buttermilk-enriched chocolate sponge coated in chocolate sauce, rolled in coconut flakes, and topped with hand-piped jam and buttercream.
  • Caramelised Biscuit – rich chocolate sponge coated in chocolate sauce, rolled in golden caramelised biscuit crumb, and finished with hand-piped buttercream and salted caramel sauce.

Priced at £4 for a pack of two, the Lamingtons showcase how M&S is drawing inspiration from global food trends to create fresh new products for its customers, said the retailer.

It follows the launch of M&S’ Magic Coffee, which was inspired by the Melbourne coffee scene, in 2023.

Each Lamington is hand-finished by the skilled team at Genesis Bakery.

Alice Birch, Product Developer at M&S, said: “Lamingtons are the most iconic cake from down under, and it’s hugely exciting to be the first to bring our version of this beloved Aussie classic to the UK high street.”

Genesis Bakery employs over 250 people at its Magherafelt site, and its collaboration with M&S continues to drive innovation and growth in Northern Ireland’s agri-food sector.

    Nearly all the deserts in m/s are all to do with chocolate or Salted Caramel in summer what about Zingy flavours Lemon/Orange Mango thi gs like that.

    I am an Australuan.These are not Lamingtons. Not even close.The cake is wrong, the icing wrong and dolloping buttercream on top is offensive.

    Call your cakes whatever you like BUT claiming to be an Aussie icon is not acceptable.

    I hope they are tastier than Marks and Spencer’s scones! Fruit ones depend where the fruit was thrown in from!! Tried the supposedly cheese ones- awful, small and hardly a cheese taste either in or on! Cheese scone ? Try Eden cafe in Penrith they are real cheese scones.
    Otherwise I love Marks cakes, honest.

    Lamington s were little squares of coca and coconuts covered sponge. When I bought them in Brisbane in 1960. No cream!

    M&S is all about Australia now, high members of Leadership Team been reruited to help Run Company as think our CEO worked over there so has connections with Coles. Now getting their food over here too. Be an all Aussie company soon.

    They are an interesting take on the lamington, but the sponge is too heavy. Having grown up in New Zealand, a true lamington has a lighter sponge.

    My Mum lived in Australia in WW2 and then she came home and got married. I remember her talking about Lamingtons when I was about 7 or 8 and how good they were. I’m looking forward to trying them

    That is not a traditional Lamination, it’s sponge cake rolled in runny chocolate sauce and then rolled in coconut.

    What is the biscuit doing there?

    Take the biscuit away, or it’s just a cake with a biscuit on top, not an Aussie favourite, as i am Aussie…

    I am an Australuan.These are not Lamingtons. Not even close.The cake is wrong, the icing wrong and dolloping buttercream on top is offensive.
